Loaded Burrito Bowl Recipe

It’s no secret that I am slightly in love with all recipes that call for a little bit of chorizo. I make these healthy burrito bowls for myself at least once a week for lunch or a quick dinner option because they are so easy to make and taste amazing. If I am being completely honest, I do not like vegetables. I know, I am a horrible example of a grown woman but it’s the truth. It takes a lot for me to eat healthy on a regular basis and this is probably the only way I can fit all the nutrients in without compromising taste!

Here you have it, my go-to meal that I can basically eat every single day of the week. I try to switch it up once and a while and add chicken or various veggies but this is the basic recipe that is no-fail goodness in my books.

If you’re always throwing meals together last minute, like I am. Make sure to keep these ingredients around for delicious chorizo burrito bowls.

You’ll have a healthy, wholesome meal that will be ready to eat in all of 15 minutes!

 

Ingredients

  • 1/2 chorizo
  • 1/3 white onion, sliced
  • 1/2 small can of sliced black olives
  • romaine lettuce
  • 1/3 green pepper or red, diced
  • mushrooms
  • beans of choice
  • shredded cheddar cheese

**1 tablespoon Sriracha sauce mixed with 2 tablespoons sour cream for topping**

  • Toppings:
  • Pico
  • Guacamole
  • Salsa
  • Micro greens

Instructions

In a medium skillet, heat chorizo pieces, onion, peppers and mushrooms – add a dash of oil if cooking thawed. (I used frozen)

Rinse and dry lettuce and place in bowl.
Once ingredients are cooked, add the beans for a few minutes to simmer on the stovetop. Then place all ingredients on top of lettuce and fill the rest of the bowl with pico, guacamole, salsa, black olives, micro greens – or whatever your favorite toppings are!

Top with shredded cheddar cheese and ‘special’ sriracha/sour cream mix and enjoy!
