#KrinosFetaFaceoff Healthy Feta Baked Breakfast Skillet

Breakfast has never looked so good, if I have to say so myself. I have partnered with @Krinoscanada again and I’m thrilled to tell you about their new #krinosfetafaceoff challenge! They put me to the test and have asked me to come up with a unique recipe using their new Krinos Multi-packs and boy did I invent something delicious!

This recipe will have your family wanting it for breakfast lunch and dinner. Feta baked breakfast skillet is especially easy to make since it can be prepared beforehand and eaten at a later time. Components can be pre-made whilst adding the eggs in last for that easy-peasy ‘i just threw this together’ meal. Whether you have to cook for a crowd or come up with a early breakfast for a lot of people, this make for the perfect solution to looking like you have your life put together. My family has especially enjoyed it as an impromptu dinner idea too.

Something about perfectly dip-able eggs make for comforting mornings made right. Creamy feta, delicious chorizo, vegetables and some chickpeas all fenced around a oozing egg will have you wanting more and your guests begging to be invited again.  Please note: Since this recipe only calls for one Krinos multi pack insert, to maintain ultimate freshness open one pack while the other pack stays fresh and sealed.

 

Ingredients

1/2 onion finely chopped
2 garlic cloves finely chopped
1 x 200g chorizo cubed
1 cup baby spinach, washed and dried and shredded.
1 cup feta cheese cubed (1 box Krinos Feta Multi- pack)

2 tbs Olive Oil
1 cup canned chick peas
1 cup mushrooms cubed
1 tomato cubed
salt & pepper to taste
1-2 eggs per person

Instructions

Pre-heat the oven to 350°c.
Fry the onion and garlic with olive oil in a large frying pan until
translucent.
Add the chorizo and chick peas and fry until golden brown.
Add the spinach, mushrooms and tomato and cook for 5 minutes.
Add half the feta to the mix and cook until soft.
Sprinkle with salt and pepper.
Remove from heat, spoon onto cast iron skillet and make hollows in the
mixture.
Break eggs in center and bake for 5 minutes – or as long as you’d like for
eggs to cook.

Remove from the oven and serve immediately.
This recipe goes especially well with crusty bread and is perfect for
brunch with the family!
